Black Bean Spaghetti
Ingredients
2 Servings- 200 g black bean spaghetti
- a generous amount of olive oil
- 20 cherry tomatoes
- 2 cloves of garlic
- 1 teaspoon salt
- 4 tablespoons red pesto or 4 tablespoons walnut pesto
- 0.5 lemons
- grated parmesan
- ground pepper
- 2 handfuls of basil
Steps
Cook 200 g black bean spaghetti according to package instructions.
Heat a generous amount of olive oil in a pan. Add 20 cherry tomatoes, 2 cloves of garlic and 1 teaspoon salt. Fry for a few minutes.
Add the cooked spaghetti along with 4 tablespoons red pesto or 4 tablespoons walnut pesto and the zest of 0.5 lemons to the pan. Heat well and toss. Mix in juice of the lemons.
Top with grated parmesan, ground pepper and 2 handfuls of basil.
